My baby brother Timothy "Timmy" Logan is an excellent cook. I'm the only one in the family allowed to call him that(LOL) His grilling is out of this world. Ingredients For timmy's texas spicy beef brisket

  • 5-8 lb
    beef brisket (trim the fat down to ¼ in)
  • 2 Tbsp
    cumin
  • 2 Tbsp
    oregano, dried
  • 1 Tbsp
    onion powder
  • 2 tsp
    chipotle pepper (mccormick’s gourmet)
  • 1 tsp
    coriander seeds, grounded
  • HOUSE SEASONING-USE A COUPLE OF TBSPS FOR RECIPE, SAVE THE REST FOR FUTURE SMOKING
  • 1/2 c
    kosher salt
  • 1/4 c
    black pepper
  • 1/4 c
    garlic powder

How To Make timmy's texas spicy beef brisket

    Score the brisket on both sides with a knife. Combine all of the ingredients and rub liberally on the brisket. Place the brisket in plastic wrap and place in the refrigerator. Allow the rub at least 12 hours for full flavor. Smoke the brisket in a smoker or on a grill using indirect heat for 5 hours. I use a Weber grill with a water pan under the meat to help it stay moist!! Maintain a temp between 250-275 degrees. For a little extra smoke flavor use soak hickory chips wrapped in aluminum foil, place directly over the coals. Brisket will be very dark on the outside but perfectly cooked. The main thing is not to rush it. Add more coals as needed. Enjoy
