Three Bean Chili

Tonight was my first time making chili, so it was certainly a learning experience!

I got the recipe on this site, and even with modifications it was MUCH too spicy for my fiance and small children!

So this is my adapted recipe to suit my family's tastes. :)

Ingredients

2 lb
lean ground beef
2 can(s)
(15oz size) black beans
2 can(s)
(15oz size) red kidney beans
2 can(s)
(15oz size) pinto beans
2 can(s)
(7oz size) diced tomato & green chile
2 can(s)
(small) tomato paste
28 oz
tomato sauce

red bell peppers, diced
1
yellow onion, diced
14 oz
diced green chiles
1 Tbsp
minced garlic
1 tsp
oregano
1 Tbsp
cumin
3 Tbsp
chili powder
1 Tbsp
olive oil
2 c
water
2 can(s)
sweet corn

Directions Step-By-Step

Drain & rinse beans & corn. Set aside.

Brown & drain meat. Set aside.

In large stock pot: sautee onions, garlic & bell pepper in 1 tbsp oil.

Add tomato sauce, tomato paste & 2 cups water. Stir.

Add spices & meat. Mix well.

Add diced tomato & green chile - include liquids. Add green chiles. Stir.

Add beans, mix well. Simmer on low heat for 2 hours, stirring occasionally.

** We like to serve it with cheese and crushed tortilla chips. :) **
