Tater Tot Casserole

Don't discount the tater tot casserole! This one is one I tweaked for my son. I wanted him to eat more veggies and he loved it in the casserole! Plus it's delicious for everyone. You can make it a bit more healthy by changing to lower fat cheese, a healthy choice soup, and skim milk. Either way it's a yummy, hearty dinner!
bag frozen tater tots
ground beef, browned and drained
bag frozen mixed veggies, cooked halfway according to directions
cream of mushroom soup
envelope onion soup mix
shredded sharp cheddar cheese
1In buttered 9x13 Pyrex dish, spread 1/2 of the frozen tater tots. Top with the cooked ground beef. Spread half-cooked veggies on top of beef.
2In small saucepan, mix soups and milk. Stir until smooth and bubbly. Pour over top of veggies.
3Top sauce with cheese, then sprinkle on remaining tater tots. Bake at 350 for 30-45 mins. Place under broiler for 3-5 mins before serving for extra crispy tots.
