Ingredients

1/4 c white sweet onion, diced
1 lb lean ground beef, or turkey
1 pkg taco seasoning mix,(1.25 oz.)
2/3 c water
4 c bisquick baking mix
1/2 c bean liquid +water to make 1/2 cup liquid
15 oz can black beans or other beans,drained, reserve liquid
2 c shredded cheddar cheese
toppings: sour cream-diced tomatoes, onion, salsa, guacamole

Pat's Notes:

All the ingredients you want to have in your taco and then some. This is a Bisquick favorite recipe for me! It will be a great after school snack too! Great for the football season. Go team!

Directions

Preheat oven to 375^. Spray 12 muffin cups with cooking spray.Set aside.

Brown beef or turkey in a hot skillet and drain any fat. Add the taco seasoning mix and 2/3 cup water; simmer for 4 minutes. Set aside.
In a medium bowl mix the bisquick and 1/2 cup water + liquid until blended. The mixture will be thick like pizza dough.

Press 1 to 2 Tablespoons of dough into bottom of each muffin cup and press slightly up sides.
Spoon an equal amount of meat mixture in each cup then your choice of beans ( I like to use pinto beans or refried beans) equally in each.

Bake for 8 minutes and remove from oven. Sprinkle cheese equally among the cups and continue to bake for 2 more minutes or until cheese has melted.
Remove from muffin tin after 3 minutes and garnish with your favorite toppings.

These really look good Pat and two would be a meal to me with a salad and bread. They would freeze great to so could be made ahead. Thanks Pat.
