I like to dice up the tops of the peppers A's add to the mixture for color and taste.

Ingredients

1 lb
ground chuck
1 small
onion diced
1 can(s)
corn drained
1 can(s)
black beans drained and rinsed
I jar(s)
salsa our picante
1 c
rice
1/2 c
shredded cheese your choice
4 medium
peppers. color of choice
1 pkg
taco seasoning. ( our to taste )

Step-By-Step

1Brown meat and add taco seasoning
2Add diced onions
3Add rest of ingredients one at a time and incorporate
4Cover and let simmer while preparing peppers.
5Cut tops off peppers. Clean out insides and rinse out with water.
6Plane peppers in nonstick pan and place in 350 degree oven for 10-15 minutes.
7After removing peppers from oven, full peppers with meat mixture. Top with shredded cheese. Return to oven and cook for 15 minutes. 350 degrees.
