This is super easy and super quick. I also like to cut cut the tops off and empty the inside of the bell peppers. This way an individual can have a whole pepper.

Ingredients For stuffed peppers

2 lggreen bell peppers

1 ctomato-basil pasta sauce

3/4 lbground sirloin

1/4 cchopped onion

1 tspdried italian seasoning

1 cshredded mozzarella cheese

1/4 tspsalt
-
1/4 tsppepper
-
1(8.8oz) precooked whole grain brown rice
How To Make stuffed peppers

1Cut bell peppers in half length wise; discard seeds and membranes. Place bell pepper halves, cut side up, in an 11"x17" baking dish. Microwave at high 6-7 minutes or until tender.

2While peppers cook, heat a large nonstick skillet over medium high heat. Cook beef and onion until browned, stirring to crumbled beef. Drain if necessary; return to pan.

3Stir in dried Italian seasoning, salt, pepper, rice and pasta sauce. Cook 1-2 minutes or until warm, stirring occasionally.

4Fill bell pepper halves with beef mixture; sprinkle evenly with cheese. Microwave at HIGH 2-3 minutes or until cheese melts.
