Combine all Pizza Sauce ingredients in a saucepan. Simmer for 2-3 hours to bring out the sweetness in the tomatoes. Then set aside to use in the rest of the recipe.
Mix all meatloaf ingredients in a large bowl. Take 1/2 of the meat mixture and mold it onto an oval shale in a pan. Make an indentation across the top of this, leaving raised edges.
Fill indentation with 3/4 cup shredded mozzarella cheese.
Take remaining meat mixture and cover the top of the meatloaf, making sure to seal in the mozzarella.
Top the meatloaf with the bacon. (I cut the strips in half, making 8 pieces, to fit the loaf better)
Cover the top with more pizza sauce, saving some sauce to put over the meatloaf on the plate. Cover with foil and place in 350 degree oven (or this can be cooked on a grill over indirect heat) for 1-1 1/2 hours, or until meatloaf is cooked through.
Remove foil & top with remaining shredded mozzarella. Bake until cheese is melted.
