Ingredients For steak tacos

  • 1 lb
    boneless beef sirloin steak, 3/4
  • salt & pepper, to taste
  • 1 - 15 oz can
    kidney beans, rinsed & drained
  • 1 - 10 oz can
    ro*tel (diced tomatoes & mild green chilies), undrained
  • 6
    flour tortillas, taco size
  • 3 c
    lettuce, shredded
  • 1 1/2 c
    mexican blend shredded cheese
  • guacamole

How To Make steak tacos

    Prepare grill for direct heat cooking or position broiler rack so that top of meat on rack in pan will be 4" from heat source; preheat broiler.

    Sprinkle both sides of steak with salt & pepper. Grill or broil, turning once, 2 - 3 minutes per side for medium rare. Let stand 10 minutes.

    Meanwhile, heat large nonstick skillet over medium high heat. Add beans & ro*tel; bring to boil. Cook, stirring, until heated through & most liquid has evaporated, about 5 minutes.

    Warm tortillas according to package directions. Thinly slice steak. Dividing evenly, fill tortillas with lettuce, steak slices, bean/tomato mixture & cheese. Serve with guacamole.
