Ingredients For steak au poivre w/ cognac mushrooms

    filet mignon (2" thick)
  • 1 Tbsp
    olive oil
  • 3 Tbsp
    peppercorns, tricolored, crushed
  • 1/2 tsp
    salt, divided
  • 1/4 c
    butter, divided
  • 1
    shallot, minced
  • 1 - 8 oz. pkg
    mushrooms, sliced
  • 1/4 c
    cognac
  • 1/4 c
    beef broth, reduced sodium
  • 1/2 c
    heavy cream
  • GARNISH:
  • parsley

How To Make steak au poivre w/ cognac mushrooms

    Preheat oven to 425 degrees F. Rub fillets with oil, sprinkle with crushed peppercorns & 1/4 tsp salt, pressing to adhere.

    Melt 2 tbsp butter in a cast iron skillet over medium high heat. Add fillets to pan; cook 2 - 3 minutes on each side or until browned. Place skillet in oven & bake for 12 minutes or until desired degree of doneness. Remove fillets from skillet; transfer to a serving platter, tent with foil to keep warm.

    Melt remaining 2 tbsp butter in cast iron skillet over medium high heat. Add shallot & mushrooms; saute 10 minutes or until tender. Add cognac & broth. Cook 5 minutes or until liquid is reduced by half. Stir in heavy cream & remaining salt. Cook 5 minutes or until sauce is thickened. Spoon sauce over fillets & garnish with parsley.
