Ingredients
| 3 lb | chuck roast |
| 1 can(s) | 14.5 oz diced tomatoes, no salt added |
| 4 c | home made beef stock, or low sodium |
| 1/2 tsp | bold & spicy mustard |
| 1/2 tsp | lime juice |
| 1/2 tsp | splenda granulated |
| 1/4 c | chili powder |
| 1 tsp | cumin |
| 2 tsp | granulated garlic |
| 1 1/2 tsp | granulated onion |
| 1 tsp | black pepper |
| pinch | mexican oregano |
| whole fresh jalapeno | |
| salt to taste |

Directions
Season with your favorite seasonings and sear roast on both sides. Place all ingredients in dutch oven or slow cooker. I used my 6 qt. Nesco electric roaster.Place roast in and cook on 300° for 5-6 hrs or till pull apart tender.It's great served over spicy cornbread.
Spicy Cornbread or cornbread muffinsFor Chili sauce, add 1/4 c masa to 1 c of hot broth/sauce. Mix well till all lumps are removed, add back to the rest of the sauce over low heat and let thicken, repeat if not thick enough.
