Ingredients

3 lb chuck roast
1 can(s) 14.5 oz diced tomatoes, no salt added
4 c home made beef stock, or low sodium
1/2 tsp bold & spicy mustard
1/2 tsp lime juice
1/2 tsp splenda granulated
1/4 c chili powder
1 tsp cumin
2 tsp granulated garlic
1 1/2 tsp granulated onion
1 tsp black pepper
pinch mexican oregano
whole fresh jalapeno
salt to taste

If your looking for a slow cooked meat dish that is just delicious, try this one!

 

Directions

Season with your favorite seasonings and sear roast on both sides. Place all ingredients in dutch oven or slow cooker. I used my 6 qt. Nesco electric roaster.

Place roast in and cook on 300° for 5-6 hrs or till pull apart tender.

It's great served over spicy cornbread.
Spicy Cornbread or cornbread muffins

For Chili sauce, add 1/4 c masa to 1 c of hot broth/sauce. Mix well till all lumps are removed, add back to the rest of the sauce over low heat and let thicken, repeat if not thick enough.

Lynn, it looks like a new way to do chuck. I am like you, like the pot roast thing but sometimes it's a little ho hum.

Really looks great. I'm glad you mentioned it could be cooked in a dutch oven as I don't have a slow cooker. Thanks for sharing.

Thanks ya'll, and in the oven would work just as well!!! Or even a crock pot, just not sure how long on low in a crock pot.

I would take the left overs add some type of vegies and place in a casserole top with the cornbread mixture and bake like a potpie yummmy

That sounds good Jamie, I'm gonna use it for their lunch though, so will probably add potatoes and wrap it up as a burrito, love your idea though
