Skewers of grilled top beef sirloin cubes and colorful red and yellow bell pepper chunks, lightly seasoned with Italian dressing, are served atop a bed of orzo, a tiny rice-shaped pasta, flavored with fresh basil and Parmesan. Add a tossed green salad, fresh baked corn muffins and lemon-infused iced tea to complete the meal.

Ingredients For sirloin kabobs with parmesan orzo

  • 1 lb
    (1- inch thick) boneless beef top sirloin steak, cut into 1-1/4- inches pieces
  • 1
    red bell pepper, cut into 1- inch pieces
  • 1
    yellow bell pepper, cut into 1- inch pieces
  • 1 Tbsp
    chopped fresh basil or 1 tsp dried basil
  • 1 Tbsp
    italian dressing
  • 2 clove
    (large) garlic, minced
  • PARMESAN ORZO:
  • 1 c
    uncooked orzo pasta, cooked according to package directions
  • 2 Tbsp
    chopped fresh basil or italian parsley
  • 2 Tbsp
    shredded parmesan cheese
  • 2 tsp
    olive oil

How To Make sirloin kabobs with parmesan orzo

    Soak eight 8- inch bamboo skewers in water 10 minutes. Toss beef and bell peppers with 1 Tbsp basil, dressing and garlic. Thread beef and peppers alternately onto skewers.

    Parmesan Orzo: Mix cooked orzo, 2 Tbsp basil, parmesan cheese and oil in bowl; keep warm.

    Place kabobs on grate over medium heat. Grill, uncovered, about 9 to 11 minutes for medium rare to medium doneness, turning occasionally. Serve with orzo.

    To Broil: Place kabobs on rack in broiler pan so surface of beef is 3 to 4- inches from heat. Broil about 9 to 12 minutes for medium rare to medium doneness, turning once.
