Sicilian Pot Roast

Ingredients

4 lb
beef rump roast
8
black olives
8
stuffed green olives
1
garlic clove, chopped
2 oz
salt pork, chopped
flour
4 Tbsp
olive oil
1 can(s)
plum tomatoes
1 large
onion, sliced
1/4 c
raisins
salt and pepper to taste

Step-By-Step

1Cut slits into meat and stuff alternately with black olives, stuffed olives, bits of garlic and salt pork.
2Dredge the meat with flour and brown in hot oil.
3Add tomatoes, raisins, and onions; season with salt and pepper.
4Cover and cook in moderate 350 degree oven 2 1/2 hours or until tender.
5Check occasionally, and add water if needed.
