savory roast beef (mock prime rib)

This recipe is based on one that my mom has used for many years. It always turns out so delicious and tender. In fact, I just made this on Saturday using a bottom chuck roast and you could cut it with your fork. I didn't cook it until it shredded apart because I prefer to have it a little rare/medium-rare, but if I had let it go longer in the crock pot, I know it would be "fork tender" for sure! This is also delicious on a crusty roll, a slice of provolone cheese, with some sauteed onions/mushrooms/peppers and use the au jus for dipping sauce.

Ingredients For savory roast beef (mock prime rib)

    onion, sliced thick
  • 1
    beef roast, any variety, but i usually buy something cheap
  • 1 pkg
    dry italian dressing mix
  • 1 can
    campbell's beef consumme
  • 1/4 c
    concentrated au jus

How To Make savory roast beef (mock prime rib)

    Lay the onion slices on the bottom of the slow cooker and place your beef roast on top the onion slices. Sprinkle the Italian dressing mix over the top. Pour the liquids in (I do NOT add water), taking care to not pour over the dressing mix.

    Cook on HIGH 4-6 hours (depending on the size of your roast - check with your instruction manual, and depending on your preferred "doneness" for the roast).

    Slice, place back in the slow cooker to keep warm and in the juice, and enjoy!
