Savory Braised Short Ribs with Horseradish Sauce

Ingredients

4 lb
beef short ribs
10 1/2 oz
condensed beef broth
1 c
onion, coarsely chopped
1 c
water
4
peppercorns
2 tsp
worcestershire sauce
1
garlic clove, crushed
1
bayleaf
1/2 tsp
dried marjoram
3 Tbsp
unbleached flour
1/2 c
water

SAUCE INGREDIENTS

1/4 c
sour cream
1 Tbsp
prepared mustard
2 1/2 Tbsp
prepared horseradish
1/8 tsp
salt

GARNISH INGREDIENTS

tomato wedges
parsley sprigs

Step-By-Step

1Ribs should be cut into serving-size pieces.
2Trim any excess fat from short ribs.
3Brown short ribs well on all sides (about 30 minutes) in dutch oven over medium heat.
4Pour off drippings.
5Add broth, onion, 1 cup water, peppercorns, worchstershire sauce, garlic, bay leaf and marjoram.
6Bring to a boil; reduce heat, cover and cook slowly 2 to 2-1/2 hours or until tender, turning once.
7Meanwhile, prepare horseradish sauce.
8Place short ribs on serving platter and keep warm.
9Skim fat from cooking liquid.
10Combine flour with 1/2 cup water, mixing until smooth; combine with cooking liquid, bring to a boil, stirring constantly, reduce heat and cook slowly 3 minutes.
11Strain, if necessary, and serve with short ribs.
12Garnish platter with tomato wedges and parsley.
13Serve horseradish sauce with short ribs.
14HORSERADISH SAUCE: Combine sour cream, horseradish, mustard and salt in small bowl.
