Ingredients For rueben casserole

10 ozrye bread

3.5 cgreen apples, chopped

1.25 cred onion, thinly sliced

16 ozsauerkraut, rinsed, drained

1/4 cdijon mustard
-
1/4 cmayonnaise
-
8 ozswiss cheese, grated

1/2 lbcorned beef, thinly sliced
How To Make rueben casserole

1Cut rye bread into 3/4\" cubes and crisp bread in 400 oven for 10 minutes.

2Spoon 1/2 of bread into shallow 2 1/2 to 3 quart baking dish.

3In a bowl, combine apples, onion, sauerkraut, mustard, mayonnaise and 1/2 of cheese.

4Spread 1/2 of mixture over bread cubes.

5Coarsely chop the corned beef and spread evenly over mixture and then top with remaining apple mixture.

6Cover tightly with foil and bake 50 to 60 minutes until apples have cooked tender.

7Sprinkle remaining bread and top with remaining cheese.

8Bake uncovered for 20 minutes until cheese is melted and browned.
