Ingredients For ropa vieja ("old clothes")

  • 1 lb
    beef chuck
  • 1 md
    onion chopped
  • 2 Tbsp
    oil
  • 3 md
    tomatoes chopped
  • 3
    chopped and seeded serrano or jalapeno chiles
  • 3
    eggs beaten

How To Make ropa vieja ("old clothes")

  • 1
    Cook meat in salted water(about 1/2 cup salt) until tender. Drain and shred the meat after it cools. Saute' the onions in the oil until tender. Add the tomatoes and chiles and continue to cook. Mix in the meat and season to taste. Lower the heat and add the beaten eggs.Stir sufficiently to keep the egg from forming an omelet. Serve with warm four tortillas.You can also use this as a filling for tacos or burritos.
