Roast with Mushroom Gravy

Put all ingredients in a dutch oven with a tight fitting lid.
Leave in oven for 3 hours. DO NOT take off the lid. Take out after 3 hours and let sit for 20 minutes before slicing. Makes a beautiful mushroom gravy you can serve over mashed potatoes!!
Note: you can double the gravy ingredients to make a larger amount.
