Roast Beef and Onions

- 4 small onions, quartered
- 1 tbsp. olive oil (i broke down and used my really good stuff)
- kosher salt and black pepepr
- 1 boneless rib or rump roast, 4 lbs.
1Heat oven to3 75. In roasting pan, toss onions, oil, 1/2 tsp. salt and 1/2 tsp. pepper. Push onions to the edges of the pan.
2Season beef with 1 tsp. each salt and pepper and place in center of pan. Roast beef to desired doneness, 65 to 80 minutes for medium rare. Remove from oven when the internal temperature registers 125. Transfer beef to cutting board. Tent loosely with foil and let rest for at least 15 minutes. Slice and serve with the onions.
