Rice and Beef Casserole

Had this recipe since high school. We made it in Home Economics and it was a hit. Been making it ever since for holidays or special events and it's always a favorite.

1 c
instant rice
1 can(s)
cream of chicken soup or cream of mushroom
1 lb
ground beef
1 pkg
cheddar cheese, shredded
salt and pepper to taste


1Follow directions on Instant Rice box in order to cook 1 cup instant rice. Set aside and add 1 tablespoon of butter.
2Brown meat until done. Drain. Add one can of cream or chicken soup or one can of cream of mushroom soup. Stir together until meat is well coated.
3In a 13x9 casserole dish pour rice in dish. Spoon meat onto rice making sure you cover rice. Add cheese to top making sure you cover meat.
4Place in 350 degree pre-heated oven until cheese is melted.
