Ingredients For reuben sandwich casserole

  • 8 slice
    rye bread, cubed, divided
  • 1 bottle
    thousand island dressing, divided
  • 1 - 16 oz can
    sauerkraut, drained
  • 1/2 sm
    onion, sliced thin (optional)
  • 1/2 - 3/4 lb
    deli style corned beef, sliced thin
  • 1 1/2 c
    swiss or provolone cheese, sliced or shredded

How To Make reuben sandwich casserole

    Preheat oven to 350 degrees F.

    Spray a 13" x 9" baking pan with cooking spray.

    Add 1/2 of bread cubes to pan (does not have to totally cover pan).

    Add 1/2 bottle dressing over bread cubes.

    Pour sauerkraut evenly over dressing.
  • 6
    Add onion, if using over sauerkraut.
  • 7
    Add corned beef over onion (or sauerkraut).
  • 8
    Add remaining 1/2 bottle dressing over corned beef, spread evenly with spatula.

    Add remaining 1/2 of bread cubes, spread evenly.

    Add cheese over bread.

    Cover pan with foil & bake 30 minutes. After 30 minutes, take foil off & increase heat to 375 degrees F & bake for an additional 10 minutes or until cheese is golden brown.
