I haaaaated meatloaf when I was a kid. I only just started liking it a few years ago when I decided it was time to find something that worked for me. I doctored a recipe that I found on the side of a box, and this is the result. Now I actually crave it!! (I make another meatloaf that is equally as good, and I'll post that recipe, too.)So, if you're a meatloaf hater too, give this one a shot. ;) (photo from bing images)

Ingredients For really good bbqed meatloaf

  • 2 lbs.
    lean ground beef
  • 1 (6 oz.)
    box stovetop beef stuffing, crush with rolling pin into coarse crumbs
  • 3/4 cup
    beef bouillon, i use superior touch better than bouillon beef base (1 tsp.)
  • 2
    eggs, lightly beaten
  • 1 (6 oz.)
    can crushed pineapple, drained
  • coarse ground black pepper
  • 1 cup
    sweet baby ray's barbeque sauce, divided
  • 1/2 cup
    ketchup

How To Make really good bbqed meatloaf

    Preheat oven to 350º. Mix beef, stuffing mix, broth, eggs, pineapple and ½ cup bbq sauce. Shape into loaf, place on greased or foil-lined baking sheet, or shallow baking dish. Sprinkle top with coarse ground pepper. Bake for about 1 1/2 hours or til no longer pink in center. Coat loaf with ½ cup bbq sauce and ½ cup ketchup mixed well, during last 5 minutes of baking time. Let rest 5-10 minutes before slicing.
