Ranch Style Chicken Fried Steak and Gravy

Ingredients

4 lb
round steak, 1/2" thick
1 c
milk
1 c
unbleached all-purpose flour
"just a pinch" of salt
"just a pinch" of pepper

SAUCE INGREDIENTS

4 Tbsp
fat
4 Tbsp
unbleached all-purpose flour
1 qt
milk
milk

Step-By-Step

1Tenderize round steak.
2Dip in milk and then flour, salt and pepper to taste.
3Fry in deep fat at approximately 375 degrees until golden brown.
4After steak is done, pour off fat leaving about 4 tablespoons in pan.
5Add 4 tablespoons flour.
6Stir until smooth.
7Add 1 quart milk.
8Stir and cook until until thickened for steak gravy.
