Ingredients For prime rib w/ red wine blackberry sauce

  • BEEF:
  • 6 1/2 lb
    prime rib roast, excess fat trimmed
  • 5 clove
    garlic, whole
  • 2 Tbsp
    salt
  • 1 Tbsp
    pepper
  • RED WINE BLACKBERRY SAUCE:
  • 1 c
    red wine, dry
  • 1 sm
    onion, chopped
  • 3 Tbsp
    butter, unsalted
  • 1/2 c
    blackberries, frozen or fresh
  • 3 Tbsp
    all purpose flour
  • 1 1/2 c
    beef broth, reduced sodium

How To Make prime rib w/ red wine blackberry sauce

    BEEF: Preheat oven to 450 degrees F. Using tip of small sharp knife, cut slits into beef & insert garlic into each slit. Sprinkle beef with salt & pepper. Place beef, bone side down, in heavy roasting pan.

    Roast beef 20 minutes. Reduce heat to 350 degrees F. Roast another 1 hour & 20 minutes. Transfer beef to platter. Tent with foil to keep warm. DETERMINING DONENESS: Internal temperature should read... RARE: 110 - 120 degrees F. MEDIUM RARE: 120 - 125 degrees F. WELL DONE: 130 - 135 degrees F.

    RED WINE BLACKBERRY SAUCE: Pour pan juices into 2 C glass measuring cup (don't clean the pan). Freeze juices 5 minutes. Spoon fat off top of pan juices. Reserve juices; discard fat.

    Add wine to same roasting pan. Stir over medium high heat, scraping up any browned bits from bottom of pan. Melt butter in heavy medium saucepan over medium heat. Add onion & saute until tender, about 4 minutes. Add blackberries & cook 3 minutes. Add flour & stir to blend; cook 2 minutes. Pour red wine from roasting pan, beef broth & pan juices into blackberry mixture. Simmer until sauces thickens slightly, about 5 minutes. Season sauce to taste with salt & pepper.
