Ingredients
- 2 -4 steak bones with some red meat on them (or soupbones)
- 6 whole cloves
- cold water
- 2 bay leaves
- 1 teaspoon sea salt
- 1 bunch scallions
- 1 tablespoon peppercorns, whole
- 1/2 stick butter
- all-purpose flour
- 1/3 cup bone marrow
How To Make old west steak sauce

Step 1Choose a soupbone that has some good red meat. In a pot, half cover with cold water & add salt, peppercorns, bay leaves & cloves. Slowly bring to a boil & let simmer for about 5 hours. Remove the bone, strain & let stand until cold, about 3 hours. Remove grease from the top. Add finely chopped green onions, butter & chopped marrow. Boil until the amount is reduced to 4 cups. Strain again. Make a thin paste of flour & cold water & add slowly while stirring constantly. Add just enough to slightly thicken the sauce. Store in the refrigerator & serve warm as needed.
