My daughter Noel is beautiful, creative and an amazing cook! She has been creating her own recipes and twists on recipes since she was 5 years old.

This recipe is one that she created when she was 15 or 16 years old. Our family loves it! I hope your family will too!

Ingredients

MEAT LAYER

2 lb
ground beef, (browned and cooked)
2 pkg
taco seasoning mix (make according to package)

BEAN LAYER

1 can(s)
(16 oz.) refried beans
1/3 c
water (more if needed)
1 can(s)
(16 oz) chili beans

OTHER INGREDIENTS

1 pkg
(13 oz. bag) white corn tostito chips
1 can(s)
(28 oz.) enchilada sauce
3 c
shredded cheddar cheese (can also use other cheeses or a couple of kinds)

NOEL'S FRESH SALSA

Step-By-Step

1Preheat oven to 375 degrees.

In large skillet: Brown and cook ground beef. Add the two packages of taco seasoning and prepare as on packaging. Set aside.

2In a sauce pan, mix together the chili beans, 1/3 cup water, and refried beans. Cook for two minutes, stirring and adding more water if needed, as you want to make it easy to spread out. set aside.

3Spread out chips in bottom of large casserole dish (crumble some to fill in any gaps).

Place a layer of taco meat.

Then a layer of the bean mixture.

A layer of cheese.

Another layer of chips.

Cover with enchilada sauce.

4Sprinkle with cheese.

A layer of taco meat.

A layer of bean mixture.

A layer of chips.

Cover with encilada sauce.

Sprinkle with cheese.

5Bake at 375 for 1/2 hour or until golden and bubbly.

6***Garnish with lettuce, sour cream
and Noel's Fresh Salsa.
