I love a good meatloaf and this is one that I came up with that has just the right flavor and consistency that I like. I don't press it tight together to make it a firm loaf , I like a loose meatloaf. This is a very delicious meatloaf , my daughters have always loved this dinner and it makes great meatloaf sandwiches the next day ...yummy. This meatloaf freezes great but the recipe can be down sized easily for a smaller meatloaf if desired.

Ingredients For my meatloaf

  • FOR THE HAMBURGER MIXTURE :
  • 3 lb
    ground chuck or lean hamburger
  • 3 lg
    eggs
  • 1 md
    green pepper , chopped
  • 1 md
    onion , chopped
  • 14 1/2 oz
    can of diced tomatoes with juice
  • 1 c
    oatmeal
  • 10
    saltine crackers , crushed
  • 1 Tbsp
    garlic powder
  • 1 Tbsp
    italian seasoning
  • 1 tsp
    salt & pepper
  • 1 Tbsp
    worcestershire sauce
  • FOR THE SAUCE ON TOP :
  • 1 to 1-1/2 c
    ketchup
  • 1 tsp
    garlic powder
  • 1 Tbsp
    worcestershire sauce
  • salt & pepper

How To Make my meatloaf

    Line a oblong baking dish (11.5 x 9") with aluminium foil , allowing enough to cover the top , about 8" of foil hanging over on each end of the dish.

    In a large mixing bowl combine all the ingredients.

    Mix with your hands , I squeeze it through my fingers and folding it over several times so all the egg is combined and all all the spices gets mixed up. Mix thoroughly until all the spices are combined together with the hamburger.

    Transfer the meat mixture to the lined dish.

    Press the meat mixture out into a loaf shape to fit the dish but make sure there is a 1 - 2" space between the meat and all sides of the dish ; this will give a place for the grease to go while it's baking.

    Fold the sides over and loosely cover the meat loaf.

    Bake in a preheated oven @ 375° for 45 minutes.

    Remove from the oven and fold back the foil and drain off any grease that may have accumulated around the meatloaf. I use my meat baster to remove the grease.

    Return to the oven and continue to cook to allow the top to brown for about 30 minutes.

    Mix up the ingredients for the sauce ; optional

    Spread evenly on top of the meatloaf , Return to the oven and bake for 15-20 minutes longer.

    Serve it with a side of potatoes and a veggie ...enjoy.
