I created this flavorful chili. Please don't let the long list of ingredients deter you from trying it. Most of the ingredients you probably already have in your pantry. I had a lot of canned beans and tomatoes and veggies in my fridge I needed to use, so that is how this chili got its name. Serve this easy chili at your next tailgate party, everyone will love it! My husband asked me to add a ghost pepper or two, they are completely optional, as it made this chili quite spicy. Family says it's awesome! Enjoy!

  • 1/2
    each - red and green bell pepper, chopped
  • 8 oz
    sweet or hot italian sausage - casings removed
  • 2 md
    onion, chopped
  • 1
    carrot, chopped
  • 2 stalk
    celery, chopped
  • 1 lb
    lean ground beef
  • 1 Tbsp
    garlic paste
  • 4 oz
    semi sweet chocolate chips
  • 1 Tbsp
    cocoa powder
  • 1 c
    beef broth
  • pinch
    cinnamon
  • 1 - 15 oz
    can of each - pinto beans, black beans and whole kernel corn - drained
  • 1 - 15 oz
    can - bush's chili beans in hot sauce
  • 1 - 15 oz
    can chopped tomatoes and juice
  • 1 - 15 oz
    can - diced tomatoes with basil, garlic and orefano
  • 1 - 4 oz
    can. green chiles
  • 1 Tbsp
    each - chili powder & cumin
  • 1 tsp
    oregano, dried
  • 1 1/4 tsp
    salt
  • 1/2 Tbsp
    red pepper flakes or to your liking
  • 1
    dried ghost pepper - chopped - optional

    I diced all of my veggies in the food processor. Pulsed 6 - 8 times. You can chop by hand if prefer. In a large skillet, over medium heat - add the veggies and meat. Crumble meat as it cooks with a spatula. Stir often and when meat is no longer pink and veggies are tender.

    Add to a 6 quart slow cooker. To this add all remaining ingredients and stir. Turn pot on high and bring to a boil and continue cooking this way for 25 minutes. Turn down to low and cook another 2 hours or until desired thickness.

    Taste and adjust seasoning according to your preferences. I added a little more salt at the end.

    Serve with your favorite toppings. I used sharp cheddar cheese, green onions and sour cream. Serve with crackers or a nice crusty piece of bread.
