35 Min

1 1/2-2lbs lb
ground beef, 80% works great, good flavor
1 medium
onion chopped
1 can(s)
28oz. whole tomatoes
1 can(s)
16oz. kidney beans, or white or pinto
1 can(s)
17oz corn with liquid
1 can(s)
8oz. of tomato sauce
1 1/2-2 pkg
of taco seasoning mix(i only use taco bell)
2 c
water....may need more
salt & pepper to taste
chedder cheese or any cheese that melts fast, montrey jack is also good
tortilla chips

Directions Step-By-Step

rinse beans in cold water, chop tomatoes into chunks, any size you like.
brown beef in a 6 or 8qt. pot with heavy bottom. Drain
add onion and cook until tender, about 10 mins., than add all the rest of the ingredients. simmer for about 20 min.
soup will be thick, for thinner soup add more water as needed. salt & pepper to taste. I find not much salt & pepper is needed because of the Taco seasoning.
I serve them in chili bowls, i break up some tortilla chips for the bottom of the bowls and add some cheese, than soup., of course more cheese for the top and tortilla chips stuck into the soup all around. you can also use a dollop of sour cream on top. Enjoy!
