Mini Jalapeño Meatloaves

I love meatloaf...the food - not to be confused with the American rock musician and actor.

I had to guess at the ingredients. I usually don't measure unless I'm following someone else's recipes. It's hard to go wrong with this though.

If you really want to make it spicy. Use a can of diced tomatoes with chiles. *sizzle!

Shown in pic with Parmesan garlic mashed potatoes, tomato medley and mozzarella salad with spices and balsamic vinegar.

Ingredients

2 tsp
olive oil
2-3 Tbsp
crushed garlic (optional)
1/2 c
diced onion
1 lb
ground turkey
1 lb
lean ground beef
1 large
egg
1/4 c
chopped parsley
1/2 c
dried bread crumbs
1/4 tsp
salt
1/8 tsp
pepper
1/4 tsp
dried italian spices
1-2
diced jalapeño (seeded or use jar jalapeños)
3 Tbsp
ketchup
1/4 tsp
tapatio hot sauce

Step-By-Step

1Heat oil over medium-high heat. Add garlic and onion; sauté 5 minutes or until lightly browned. Remove from heat; cool slightly.

2In a large bowl; combine the next nine ingredients. combine the onion - garlic mixture and two tablespoons of ketchup.

3Fill muffin tin with mixture. (you may want to coat the muffin tin with cooking sprayer prior to filling)Place on a cookie sheet to prevent spillage.

4Combine remaining 1 tablespoon ketchup and hot pepper sauce in a small bowl. (I don't measure, so this is just a guideline) Brush ketchup mixture over meat loaf tops.

5Bake at 350° for 30 minutes or until a thermometer registers 165°.
