This is a very easy to prepare and inexpensive weeknight dinner. The tortillas on the bottom layer get good and crunchy. I don't know how it is for leftovers because I haven't had any! Use lettuce, tomato, grated cheese and sour cream for garnishing and you have a complete meal in no time.

How To Make mimi's mexican casserole

  • 1
Heat oven to 350. Grease a 2-1/2 quart ovenproof dish. In a large skillet cook the ground beef until no longer pink. Drain fat. Add taco seasoning packet and water and simmer for 5 minutes. (I had a little left over chopped onion and tomato and I added it to the meat this time.)
  • 2
Meanwhile, in microwave-safe bowl put beans and salsa. Heat in microwave for about 30 seconds or until easy to combine and it is spreadable.
  • 3
In prepared casserole dish place 3 flour tortillas. Layer with 1/2 beef, bean mixture, corn kernels and cheese. Place 3 more tortillas. Repeat layers.
  • 4
Bake in oven for 40-45 minutes or until cheese is melted. Remove from oven and let sit for 5 minutes before serving with optional garnishes as desired.
