This recipe has a little more kick than Sloppy Joes and full flavor. It is from the Weight Watchers 15-Minute Cookbook. For diabetics, look for low-carb buns, or eat open faced, with just one side of the bun.

Ingredients For mexico joes

  • vegetable cooking spray
  • 1 lb
    ground round
  • 1/2 c
    frozen chopped onion
  • 1 can
    (4.5 oz.) chopped green chiles, undrained
  • 2 Tbsp
    40% less sodium taco seasoning
  • 1 can
    (8 oz.) no-salt-added tomato sauce
  • 6
    hamburger buns, warmed (for diabetic or low-carb, look for low-carb buns or eat open faced with one side of bun)

How To Make mexico joes

  • 1
    Coat a large nonstick skillet with cooking spray; place over high heat, until hot. Add ground round and onions; cook 5 minutes, until meat is browned and onion is tender, stirring to crumble meat. Add chiles, taco seasoning, and tomato sauce, stirring well. Cook over medium heat 3 to 4 minutes, or until thoroughly heated, stirring often.

    Spoon meat mixture evenly over bottom halves of buns; top with remaining bun halves (unless eating open faced). Makes 6 servings. (Nutrition values would change some, if eating low-carb bun or one side only of a regular bun--would reduce carbs & calories.)
