Ingredients

MEATBALLS

1/2 lb
ground beef
1/2 lb
raw chorizo casing removed
1 large
egg
4 clove
garlic
1/2 large
carrot
1/2 c
cooked rice
1/2 c
fresh cilantro chopped
1 tsp
each salt and cumin
1/2 tsp
black pepper

SOUP

6 c
chicken broth
1/2 c
onion chopped
15 oz
can diced tomatoes with juice
1/2 tsp
cumin
1 tsp
mexican oregan
1/2 c
cilantro chopped
salt and pepper to taste

Step-By-Step

1Mix all the ingredients together for meatballs. Shape into 24 meatballs and set aside.
2Place chicken broth, onion, tomato with liquid, cumin, oregano, and cilantro in large pot. Bring to a boil and reduce to a low boil and cook 10 minutes.
Drop the meatballs in the boiling soup and continue to cook another 10 minutes.
3Taste and season with salt and pepper.
