Mediterranean Stir-Fried Beef

Ingredients

1/2 lb
boneless beef bottom round
1/2 c
water
1/4 c
red wine vinegar
2 tsp
minced dried onions
1/4 tsp
pepper
5/8 tsp
ground red pepper
6 oz
linguine
2 Tbsp
butter
2 tsp
cornstarch
2
garlic cloves, minced
3 Tbsp
olive or other vegetable oil
1 pkg
frozen broccoli, cauliflower, carrots-16 ounces
1 c
sliced fresh mushrooms
grated parmesan cheese

Step-By-Step

1Partially freeze beef, thinly slice across grain into bite-size strips.

2Combine water, vinegar, onion, pepper and red pepper.

3Add meat, mix well.

4Marinate 15 minutes at room temperature.

5Cook pasta according to package directions.

6Drain; toss with butter.

7Keep warm.

8Drain meat, reserving marinade.

9Stir cornstarch into reserved marinade; set aside.

10Stir-fry garlic in 2 tablespoons oil for 30 seconds with cheese.

11Add meat; stir fry 3 minutes.

12Remove.

13Add remaining oil.

14Add frozen vegetables; stir-fry 4 minutes.

15Add mushrooms; stir-fry 1 minute.

16Stir marinade mixture; add to skillet.

17Return meat.

18Cook and stir until bubbly.

19Cook 2 minutes.

20Arrange pasta and meat on platter.

21Sprinkle with cheese.
