meatloaf w/a sauce

During a busy work week, I will mix this up the night before to toss in the oven after work. Best to use a self draining meatloaf pan but if you don't have one...line pan w/heavy duty aluminum foil(use toothpick to put holes to drain).

Ingredients For meatloaf w/a sauce

  • MEATLOAF:
  • 2 lb
    lean ground beef
  • 2 slice
    bread (i use honey-wheat sprinkled w/milk)
  • 1/3 c
    sweet onion (finely chopped)
  • 1 Tbsp
    a-1 steak sauce (slightly heaping)
  • 3 Tbsp
    ketchup
  • 1 Tbsp
    prepared yellow mustard (slightly heaping)
  • 1/8 tsp
    ground red pepper
  • 1 lg
    egg
  • 1 sm
    can of tomato sauce
  • SAUCE INGREDIENTS:
  • 1/3 c
    brown sugar, lightly packed
  • 2 Tbsp
    prepared yellow mustard
  • 1/2 c
    ketchup

How To Make meatloaf w/a sauce

    In large bowl, combine all meatloaf ingredients. Be care to sprinkle red pepper over mixture so you don't create a "hot" spot. Mix well & press into meatloaf pan. Cover w/aluminum foil & refrigerate if planning ahead or you can cook right away too.

    Bake for 45 to 50 minutes in 375 degree oven. Uncover & top with portion of sauce (See sauce details below). Return to oven for 10 to 15 minutes or until sauce is bubbly.

    In a small microwave safe bowl, mix together sauce ingredients. Microwave & stir in 30 seconds increments until sugar is combined. Also, microwave unused portion for a dipping sauce.
