I had some hamburger that I needed to use and I thought that I would try this one. It was absolutely delicious and the best part, no guilt! There is only 305 calories. 12 net carbs per serving of six good-sized meatballs with the gravy. If you're following Weight Watchers points, there is 6 points per serving. What a great way to enjoy a yummy comfort food without the worry of not being able to get into your jeans! Enjoy!

Ingredients For lightened up saucy swedish meatballs

2 slicelight bread, toasted (i used a high-fiber reduced calorie bread and it was fine)

1/2 cfinely chopped onion

1 lbraw extra lean ground beef (4% fat or less)

1/2 cfat-free liquid egg substitute (like egg beaters original)

1/4 cfat-free milk

1/4 tspeach salt and black pepper

1/4 tspgarlic powder
-
1/8 tspnutmeg
-
1 pkgbeef or brown gravy mix, 4 serving size (like the kind by mccormick)

1/4 clight sour cream
How To Make lightened up saucy swedish meatballs

1Preheat oven to 450 degrees. Spray a large baking sheet with nonstick cooking spray. Set aside

2Toast the bread and tear into pieces. Place in a blender or food processor and pulse into crumbs. Transfer to a large bowl.

3Spray a large pot with cooking spray and saute onion until slightly softened, about 3 minutes over medium heat.

4Add cooked onion to large bowl with the breadcrumbs. Add the remaining ingredients except for the gravy mix and the sour cream. Mix thoroughly with your hands. Shape into 24 evenly sized meatballs and place on the prepared baking sheet making sure that they're evenly spaced. The mixture will be moist and don't worry if they're not shaped perfectly.

5Bake until they're almost done, about 8 minutes.

6While meatballs are baking, combine gravy mix with one cup water in a medium bowl and whisk until dissolved.

7Place the gravy mixture in the same pot in which the onions were sauteed (wash if necessary). Bring to a boil over medium heat and cook stirring until thickened, about 3 minutes. Remove from heat and add the sour cream, whisk until uniform.

8Add meatballs and stir gently to coat. Simmer until meatballs are hot and cooked through, about five minutes. Enjoy over rice, noodles, potatoes, or just plain, if you're watching your weight.
