Lean 'N Tasty Beef Breakfast Sausage

This is a great alternative to fatty pork breakfast sausage. Even friends who are not trying to limit their fat intake love these yummy patties for breakfast.

I love it because it is easy to make ahead, form into patties and freeze. Just thaw, cook, and serve ... and sit back and enjoy the compliments!

1 lb
lean ground round
1/2 c
beef broth
1 tsp
lemon zest, grated
1 Tbsp
lemon juice, fresh
4 Tbsp
dry breadcrumbs
1/4 tsp
fennel seeds, crushed
1/4 tsp
1/4 tsp
ground ginger
1/4 tsp
rubbed sage
1/4 tsp
red pepper flakes


1In a large bowl, combine all ingredients. Mix Well. Cover and let rest 15 minutes.

2Shape meat mixture into 8 equal patties.

3Coat a large skillet with nonstick cooking spray. Cook patties, working in batches if necessary, over medium-high heat for 5-6 minutes on each side.

4Remove patties from skillet and drain on paper towels. Serve hot.
