Italian Style Quiche from Mom Marcon's Kitchen

pinch tips: How to Tie a Roast


1/2 lb
lean ground beef, or a little more
1 c
chopped onion
1 clove
garlic, chopped
1 pkg
frozen chopped spinach, thawed, 10 oz
3 c
cooked rice
1 c
grated jack cheese
eggs, beaten
3/4 c
1 Tbsp
1/2 tsp
1 can(s)
tomato sauce, 15 oz
1/2 tsp
each, basil, oregano and pepper (pepper is optional)
1 tsp
garlic salt
1/2 c
grated parmesan cheese

Directions Step-By-Step

Saute beef, onion and garlic until meat loses its red color. Add spinach, rice and jack cheese.Mix well, Mix eggs, milk, salt and pepper. Stir into rice/meat mixture. Turn into greased shallow 2 quart casserole. Bake at 350 for 30 minutes or until set. Meanwhile, blend tomato sauce and seasonings. Simmer about 5 minutes. Cut quiche into squares and serve topped with tomato sauce and Parmesan cheese.
