Cut slits in roast and insert garlic cloves into slits. Put in large roaster or baking dish. Cover roast with Italian seasonings, garlic salt, red pepper flakes and peppperoncini peppers. Mix beef base with water then pour over roast. Cover and bake in 300 degree oven for 6-8 hours.
Remove beef from pan and shred. Save broth and chill. Skim fat off of broth and reheat.
Serve on crusty rolls with smokey provolone and mozzarella slices and warm broth for dipping.
