Guinness Beef Stew

Ingredients

1 lb
beef stew meat
4 medium
carrots, sliced
1-2 bottle
guinness stout (enough to cover meat)
1 pkg
frozen pearl onions
6 sprig(s)
fresh thyme**
**i didn't have any thyme, so added a few shakes of italian seasoning; it worked for me.
1/2 c
water
1/2 c
flour
1/4 c
honey
salt and pepper

Step-By-Step

1Brown meat in a little oil in large pot. When meat is nicely browned, add sliced carrots.
2Add Guinness till meat and carrots are covered. Simmer for about an hour.
3Add onions and thyme. Continue to simmer for 30 more minutes.
4Mix flour and water in a bowl till smooth. Add to stew and cook until thickened. Now stir in honey, add salt and pepper to taste.
5Serve over, under, or with mashed potatoes.
