Ingredients
| 1 lb | beef stew meat |
| 4 medium | carrots, sliced |
| 1-2 bottle | guinness stout (enough to cover meat) |
| 1 pkg | frozen pearl onions |
| 6 sprig(s) | fresh thyme** |
| **i didn't have any thyme, so added a few shakes of italian seasoning; it worked for me. | |
| 1/2 c | water |
| 1/2 c | flour |
| 1/4 c | honey |
| salt and pepper |

Directions
Brown meat in a little oil in large pot. When meat is nicely browned, add sliced carrots.Add Guinness till meat and carrots are covered. Simmer for about an hour.Add onions and thyme. Continue to simmer for 30 more minutes.Mix flour and water in a bowl till smooth. Add to stew and cook until thickened. Now stir in honey, add salt and pepper to taste.Serve over, under, or with mashed potatoes.

I made the stew but not the mashed potatoes; but, I doubled the beef stew meat so I doubled the beer & the honey & the flour & water. But, I used Extra Stout Guiness Stout & it was just way too strong a flavor. My husband hated it. The honey didn't sweeten the stout enough.
