Ground Beef/Vegetable casserole

Linda Cameron Recipe

My mother made this casserole for the family and I continued it with my family. It is, by far, the favorite comfort casserole in my house. I, also, used to sell casseroles and this one was ordered the most. The best thing about it is that it is packed with a variety of vegetables in one dish. It is great served with sweet corn muffins and applesauce.

This is very much a comfort food! I think it's even better heated up the next day.
