Ground Beef/Vegetable casserole
|1 1/2 lb||ground beef|
|3 to 4||carrots sliced or two cans sliced carrots, drained|
|1 to 2||potatoes, peeled and sliced, or two cans sliced potatoes, drained|
|2 can(s)||english peas, undrained|
|2 can(s)||small, tomato sauce|
|salt and pepper, to taste|
My mother made this casserole for the family and I continued it with my family. It is, by far, the favorite comfort casserole in my house. I, also, used to sell casseroles and this one was ordered the most. The best thing about it is that it is packed with a variety of vegetables in one dish. It is great served with sweet corn muffins and applesauce.
