Found a similar recipe on the internet and tweaked it. Made it the first time tonight for dinner - was a big hit as there were no leftovers!

We love a simple and hearty meal. This ground beef and potato casserole is one of those meals. The potatoes bake into the creamy sauce and the onions add some flavor. Ground beef is not only a budget-friendly choice, but it also adds heartiness to the casserole. We used green beans, but any veggie would work. On top is a ton of gooey cheese. A quick and budget-friendly weeknight meal.

Ingredients For ground beef & potato casserole

  • 2 lb
    ground beef
  • 1 sm
    onion, diced
  • 4 md
    potatoes, bakers
  • 2 can
    cream of mushroom soup (10.5 oz each)
  • 1 c
    sour cream
  • 1 c
    milk
  • 2 c
    cheddar cheese, shredded
  • salt and pepper, to taste
  • 1 c
    peas or green beans (optional)

Depending on the thickness of the potatoes, you may have to bake the casserole a bit longer.
  • Browning ground beef and onions.

    Brown ground beef and onion, drain fat. Season with salt and pepper to taste.
  • Potatoes thinly sliced.

    Slice potatoes very thin (I use a mandolin).
  • Soup, sour cream, and milk mixed in a bowl.

    Mix soup, sour cream, and milk.
  • A layer of potato, a layer of ground beef, onion, and veggie in a casserole dish.

    In a 13x9 casserole, place a layer of potato. Top with a layer of ground beef and onion. Add 1/2 cup veggie, if desired.
  • Half the source poured into the casserole dish.

    Pour on half the sauce.
  • Cheddar cheese sprinkled on top.

    Top with 1 cup of cheddar cheese. Repeat the layers.
  • Casserole covered in foil and baking in the oven.

    Cover with foil and bake at 350 for 1 hour. Remove foil and bake for another 10 minutes or until cheese is golden brown.
