Yesterday was one of those days I just didn't know what I wanted to fix for dinner. The following recipe is what I came up with. Hubby liked it, I found it to be too sweet from the creamed corn. He said to post it so it's posted!

Ingredients

1 lb
lean ground beef
2 can(s)
creamed corn
4 medium
potatoes, diced
1 c
milk. add more if needed
1 medium
sweet onion, chopped
salt & pepper to taste

CORNMEAL DUMPLINGS

1 c
cornmeal
1/2 c
all purpose flour
1
egg
1 tsp
salt
1/2 tsp
sugar
1 Tbsp
minced onions

Step-By-Step

1Boil diced potatoes till not quite fork tender. While the potatoes are cooking, cook the chopped onions in a large skillet. Add ground beef, cook till no longer pink.

2Add 2 cans of creamed corn to the skillet. Drain the potatoes, add into the skillet and simmer. I added about 1 cup of milk to the mix, you may add more or less as it depends on how thin or thick you want it.

3Mix all the ingredients for the dumplings in a large bowl adding milk to make a stiff dough.

4Bring the mixture in the skillet to a boil. Drop the dough by rounded teaspoons onto the ground beef mixture. Turn down to med high heat, cover & cook for 15 minutes.
