We have a lot of fresh vegetables growing in our garden, and we're enjoying coming up with new ways to eat them. This was something we came up with after having leftover pico from fajitas. We mixed the pico with ground beef and it was tasty, but the burgers were falling apart because the tomato chunks were too big and not sticking in the patties. The flavor was all there so we gave it another try with a plan - mince those veggies as small as possible. The results were fantastic. I can't even imagine why we didn't try this before now! Plain burgers will never be enough in this house again!

For those that like food with Mexican flavor, these burgers are for you. They're packed with flavor. The patties are filled with pico de gallo veggies and spices. This delicious grilled burger is truly unique and we loved the bits of avocado and sour cream. They tone the heat down a bit. Top with salsa and you have a gourmet burger prepared at home.

Ingredients For grilled pico burgers

  • 1/4 c
    minced red onion
  • 1/2 c
    minced red tomatoes
  • 1 tsp
    cumin
  • 1/2 tsp
    cayenne pepper
  • 1/4 tsp
    salt
  • 1/4 tsp
    black pepper
  • 2 Tbsp
    chopped fresh cilantro
  • 1 Tbsp
    minced garlic
  • 2 Tbsp
    hot sauce, I used Cholula chili lime hot sauce
  • 1 1/2 lb
    ground beef for burgers
  • 6 to 8 slice
    Monterey jack cheese
  • sliced avocado
  • sour cream
  • burger buns
  • salsa

How To Make grilled pico burgers

  • Minced tomatoes and onions, chopped cilantro, ground beef, onions, tomatoes, cumin, peppers, hot sauce, cilantro, and garlic in a bowl.

    Finely mince the tomatoes and onions. Chop the cilantro. Add to a stand mixer with the ground beef, onions, tomatoes, cumin, peppers, hot sauce, cilantro, and garlic.

    Then form into patties.
  • Grilling the burgers.

    Hubby grilled them for 7 to 10 minutes on each side.
  • Cheese on top of the burgers.

    Top them with the Monterey jack cheese.

    We put them on burger rolls and topped them with avocado and sour cream.

    Hubby topped his with diced fresh jalapenos from the garden. I put a little salsa on mine.
