I wanted something with a Mexican flair. I had all this in my fridge, so here we go.

Ingredients

1 lb
beef stew meat
2 Tbsp
oil
2 Tbsp
fajita seasoning
1/2
onion
1/2
orange bell pepper
1/2
yellow bell pepper
2
pablano peppers
12 oz
canned green chili
2 medium
zucchini

Step-By-Step

Step 1 Direction Photo

1Heat oil in a Dutch oven. I used coconut oil but you could use whatever you have handy. Sprinkle the meat with the fajita seasoning. Brown meat in batches. I did 3 batches. If you brown it all at once, it doesn't really brown.

2Once all the meat is browned, return it to the pan.

3Add sliced onion, bell pepper, diced pablano peppers, zucchini, and the canned chili peppers.

4Turn up to medium-high for about 10 minutes to get it going. Then reduce the heat to low and simmer for about 2 hours or until meat is tender.
