Ingredients For greek beef kebabs

2 Tbsplemon juice

4 clovegarlic, minced

salt & pepper, to taste

1/2 tsporegano, dried

6 Tbspolive oil, extra virgin

8 ozblock feta cheese, sliced 1/2" thick

6 - 10"pita pockets
-
1 1/2 lbbeef flank steak, sliced 1/4" thick

2 carugula
-
1/2 ckalamata olives, pitted & halved
How To Make greek beef kebabs

1Combine lemon juice, garlic, 3/4 tsp salt, 1/2 tsp pepper & oregano in a small bowl. Slowly whisk in oil until thoroughly combined. Brush feta slices & pitas with 2 tbsp vinaigrette.

2Toss steak with 5 tbsp vinaigrette. Thread steak onto 6 12" skewers. Grill skewers over grill until lightly charred, about 2 minutes per side. Transfer steak to platter & tent with foil.

3Grill feta & pitas over grill until lightly charred, about 1 minute per side. Transfer to platter with steak. Toss arugula & olives with remaining 1 tbsp vinaigrette. Season with salt & pepper. Serve greens with steak, feta & pitas.
