Ingredients

2.5 lb
beef brisket
2 Tbsp
cooking fat
2 small
whole onions, studded with a few cloves
1 c
brown sugar, packed
1/4 tsp
salt
1/4 tsp
pepper
1 qt
boiling water
1 can(s)
yams, drained, 29 ounces

carrots, pared and slivered
2 medium
tart apples, sliced
3 large
potatoes, pared, halved
1/2 c
sugar
1/4 c
ketchup
1 Tbsp
cornstarch
1/2 Tbsp
dry mustard
1 can(s)
mandarin oranges, 11 ounces

Step-By-Step

1Trim excess fat from beef brisket and brown on both sides in fat in dutch oven.

2Pour off drippings.

3Add onions, 1/4 cup brown sugar, salt and pepper.

4Stir in boiling water.

5Cover and bake in moderate oven (350 degrees) for 2 hours.

6Add yams, carrots, apples, white potatoes and 1/4 cup brown sugar; continue cooking, covered, 30 minutes.

7Remove cloves from onions.

8Combine sugar, 1/2 cup brown sugar, ketchup, cornstarch and mustard in small saucepan.

9Drain mandarin oranges reserving liquid.

10Stir liquid into sugar mixture and cook over medium heat until sauce boils.

11Add mandarin oranges.

12Spoon about half of the sauce over meat.

13Continue cooking, uncovered, about 30 minutes or until meat is very tender, basting with sauce occasionally.

14Carve meat diagonally across the grain and place on platter with vegetables.

15Spoon remaining hot sauce over meat and vegetables.

16Garnish with parsley flakes or fresh parsley.

17NOTE: Brisket also can be simmered on top of range until tender or can be cooked in a pressure cookier according to manufacturer's directions.
