Ingredients

1 lb
ground beef
1 can(s)
tomato paste, 6 ounces
1/2 c
oatmeal, uncooked
3 Tbsp
green pepper, finely chopped
2 Tbsp
bran
2 Tbsp
wheat germ
1 small
onion, finely chopped
1 Tbsp
fresh parsley, chopped
1
egg, lighly beaten
1/4 tsp
finely chopped garlic
1/2 tsp
salt
1/4 tsp
freshly ground black pepper
chili sauce

Step-By-Step

1Preheat oven to 350 degrees.

2Combine all loaf ingredients, using your hands.

3Form into loaf and place in 9x5x3" loaf pan, cover with layer of chili sauce (or ketchup if desired), bake 50 minutes to 1 hour.

4(Do not overbake, since part of the secret of fluffiness is shorter cooking time.)

5Serve the meat loaf sliced and hot.

6Variation: Half ground veal and half ground beef can be used for the meat loaf--lower in calories.
