Flavorful Meatloaf

I had never made or really eaten meatloaf until my husband and I got together. He is a real meat and potatoes man so I decided to find a recipe that would please him as well as satisfy my need for something a bit more healthy! I tweaked a recipe a few times and came up with this one; it has become a staple on our growing family's dinner table!

Ingredients

MEATLOAF

1
egg, beaten
2/3 c
milk
2 slices
whole grain bread, toasted and crumbled
1 c
shredded cheddar cheese
1
onion, finely chopped
1
carrot, shredded
1
zucchini, shredded
1 tsp
salt
1/4 tsp
pepper
dash
worcestershire sauce
1 lb
ground beef
1/2 lb
ground pork or ground lamb

SAUCE

1/4 c
packed brown sugar
1/4 c
ketchup
1 Tbsp
spicy mustard
1 Tbsp
worcestershire sauce

Directions Step-By-Step

Combine first 10 ingredients. Add meat and mix well.

Press into loaf pan

Combine sauce ingredients and spread over meatloaf

Bake at 350 for 60-75 minutes or until internal temperature reads 160.

Drain and let stand 10 minutes before slicing. Serve with mashed potatoes.
