Ingredients For enchilada pasta bake

1onions, small white

1red pepper

1 pkgtaco powder

1 canblack beans
-
2 canpetite diced tomatos

2 canwhite meat chicken

2 boxvelveta mac and cheese

1 pkgshredded cheddar cheese

1 jarjalapenos
- ADD CHOPPED JALAPENOS ONLY IF YOU LIKE THEM
How To Make enchilada pasta bake

1> HEAT oven to 375°F. ( I microwaved it till cheese melted) > > COOK pasta as directed on package, omitting salt.Meanwhile heat oil or butter in a large nonstick skillet on medium heat. Add chopped yellow onions and peppers; cook 3 to 5 min. or until crisp-tender, stirring frequently. Stir in Taco seasoning mix and tomatoes ( and a few chopped jalapenos if you like them); cook and stir 3 min. Add chicken, black beans gooey Cheese from the packets in Mac and cheese.... mix well and simmer. > > DRAIN pasta. Add to chicken mixture; mix lightly. Pour into 13x9-inch baking dish; top with cheese. > > BAKE 20 to 25 min. or until pasta mixture is heated through and cheese is melted. Sprinkle with cheese, sour cream if desired to serve. Jalapenos can be served on the side with this...or poured on top as my husband did..........ugh...haha > > > >
