Ingredients

1 lb
ground beef
1 medium
onion, chopped
1 can(s)
16-oz cream of mushroom soup
1 can(s)
16-oz chicken broth
1 can(s)
16-oz enchilada sauce
1 pkg
corn tortillas, cut in fourths
3-4 c
sharp cheddar cheese, shredded
1 can(s)
chopped black olives (optional)
chili pepper to taste (optional)

Directions Step-By-Step

Brown ground beef and onions in large skillet until done. Add cream of mushroom soup, chicken broth, enchilada sauce and chili pepper (if used) and simmer for 30 minutes.

In a 9x13 casserole dish layer half of the tortilla pieces, meat sauce, cheese and repeat. Top with chopped black olives if desired.

Bake at 350 degrees for 45-50 minutes
